The Health Benefits of Microgreens

Many times in literature greens have been depicted as a super food. I can think back to my childhood - and I recall fondly the image of Popeye the Sailor crushing open a can of spinach to give him a boost of inhuman strength. The health benefits of leafy greens are well known, and it’s no secret that they’re high in vitamins, minerals, and fiber, but low in calories. They help reduce the risk of obesity, heart disease, and high blood pressure, and help keep the mind sharp - and of course, they taste great!
While as an adult, I can’t stand the texture or flavor of canned spinach - YUCK - I’m in luck, because the microgreens which I grow are a far superior option, and taste way better! Recent studies have shown that microgreens are 4- to 40-fold more concentrated with nutrients than their mature counterparts. Because microgreens are harvested right after germination, all the nutrients they need to grow are there, and if the greens are harvested properly they are very concentrated with nutrients.
